If you want to step past the sewing machine motor and foot pedal speed control then I think this might be a place to start.

Here's a 3000 rpm, 12V motor for a belt drive arrangement that's $7.

Here's a crazy brushless DC motor with geartrain for 2800 rpm at 9 in/lb torque. 900 ma current draw... better have a good sized power supply.
