    So I got most of the hum out of this Ampeg M15 I'm playing with.
    I was going to shield the input wires to the first stage. Should I attatch the shield to ground or the plate?
    Which do you guys prefer?

    Attach it to ground at the input jack if you don't want to change the tone of the amp. IME attaching it to the plate is only good when you wan't to tank some top end at the input. The capacitance of the plate and grid via the shielded cable can be quite large. If you have the time you can try it both ways and you'll see what I'm talking about and you can decide which you like better.
