    Weber makes an Impedance Converter Transformer (#WZC-50):
    WZC-50

    I want to use it on a tube PA head, to bump up the impedance from 4 ohms to 16 ohms. Will that do the trick? And are there any drawbacks to using it like that?

    Will it do the trick? Maybe/probably; that's a guess based on just the link you provided. Looks like an autotransformer. If it was done well, yep, it will certainly do the trick at midrange. The "maybe" part comes in at the high and low ends of the audio range, and from whether the designer did a good job of sizing the wires for the currents involved.

    The drawbacks are the same as the maybes. You'll need to know the low frequencies you want to send through, and the highest frequencies to be sent through, and whether the converter can do that. Also, it's only 50W. It's possibly a drawback/limitation on the power.

    But yeah, there's a reasonable chance. Transformers are levers - they exchange voltage*current product between the ins and outs.
