Here are some others I read:

"Theoretical & Practical Studies on the behavior of electric guitar pick-ups" - This is a Diploma Thesis paper written by Thomas Jungmann. I've only seen it online so you will have to search for it.

"Basic Pickup Winding and Complete guitar to making your own pickup winder" by Jason Lollar. You cannot get it new. The only way to get it is to do an inter library loan, or to buy it on E-bay.
