For a standard strat, waching from the top how is the wire turning? Of course, the bobbin spins the other way...?

You can wind them and polarize however you want.
The later fender standarized way.
Bridge and neck Clockwise from the top, and South Up from the Top, Ground on the start lead.
Middle after RWRP came out was opposite.
Middle CCW, North up, and ground on the Start.
Most folks wind all the same direction and just change middle to Ground on the Finish, and North up.
