Wiring in rewound hofner pickups

I have just received my rewound hofner pickups, im trying to install them but im having trouble figuring out what the hell I should be wiring. Two pickups, three wires coming off each, two volume pots, two wires coming off each. I have obviously acquired an extra wire from bareknuckle but due to my complete lack of experience I dont know why! Please can some help explain how this can be wired.

Left pot is neck volume, middle is bridge, right is tone:

The rewound pickups have a two conductor wire with a shield, where the original wires were a single conductor with a shield.

The two conductors could be connected to the two ends of the windings with a separate shield connected to the pickup case, or they could be connected to the start of one coil and the center connection between two coils of a humbucker type pickup, with the shield connected to the end of the second coil and to the case.

What kind of pickups are these? Perhaps you should contact the person that rewound them and find out how the output wire is connected to the coil or coils.
