    We got past oat bran in everything, we managed to get to where arugula didn't have to be in everything, we outlived Brussels sprouts. Kale too shall pass...


    Oh and a note to TV chefs... I am sick to death of the goddam fried egg dripping down from atop EVERY DISH ON THE MENU.

    Thanks for the "thumbs". But really, I'm not kidding. It takes on more umami and savory flavors the same way steamed or boiled asparagus is more vegetative but almost meaty when roasted. Kale does the same thing when you fry it. And it makes a really cool and impressive sizzle and pop when you throw it in the fat. I add fried kale to beans and bacon and spice it with hot sauce. Black eyed peas are ideal for this IMO because they have a nutty element that holds it's own. You fry the bacon, a little limp. Some guys ook at that, I know. But trust me. Then fry a generous amount of kale in the fat until the edges are crispy. I use cooked and canned black eyed peas because I really don't think I could do better from dry product. Mince the bacon and add the kale, bacon and hot sauce to the pot. Simmer another few minutes to marry everything. Super good. Add onion, bell peppers or garlic as you like during cooking. Seriously, do this!

    That actually sounds pretty good. SOunds even better without the kale. Just sayin'...

    My sister is always trying to sell me on brussels sprouts. Her recipes always involve things like breading and deep frying so pretty much it could be sprouts or kale or who knows what. Kale chips rub me that way, you dry them out, cook them in tasty grease and otherwise completely hide the kaleness. We could fry strips of newspaper in bacon grease and they'd be tasty.

    I grew up on kale, not gonna eat it now.

    Hoppin' John isn't a product- its a tradition.
    You eat Hoppin" John on New Year's to insure prosperity throughout the year - red beans or black-eyed peas represent coins, and greens represent folding money. Bacon represents smoked pig meat.

    I make Hoppin' John with broccoli rabe. And a good slosh of Frank's hot sauce, to keep it hoppin'. Maybe a crumbled dried habanero for extra hoppin'. Last new year's day was especially joyful, besides not having a hangover, I found myself fully recovered from leg surgery. YAY! Thanks to doc, nurse & assistant: it worked!

    Late, filling lunch today- just fried up a batch of smelts for dinner.
    Batter was flour, corn starch, salt, pepper, garlic powder. Fried nice & crunchy. Plenty of hot sauce.
    Red seedless grapes for dessert.

    Ah! And fried smelts! I haven't had those in forever. We get good runs here on Whidbey island too. I caught a bunch and lightly smoked them for a neighbor. Maybe this year I'll go and just keep them for myself.
