...it is a 2 channel amp so I am guessing the power tubes are in pairs.... I am happy to modify the chassis, in fact I was wondering if there is any issue with simply housing the PT in a box within the lower part of the cabinet and just running the wires up tot he rack perhaps via a connector for future servicing

The 2 channels will probably be summed before the power amp; the EL84s will be arranged in pairs, but one pair will be 'pushing', the other 'pulling', as per the BR30B schematic previously linked.
A remotely mounted power transformer seems a bad idea; it would be quite involved to do it safely, which you may not be competent to achieve. I can't perceive benefit in doing it like that?
