In the Shiva schematic, what is OC1, OC2 and OC3 that looks like a resistor with circle and some thunder lighting?

The OC designation indicates an Opto Coupler package.

I guessed it opto coupler but for what? is that used as a switch that you turn it on and off?

Yep, they are used as low noise switches.
