I've been looking for a beefier PT for my Proluxe build - I just don't trust the Weber 02513. I have a question: if the specs of a PT describe the 5V rectifier filament secondary as "2.5-0-2.5" center tapped, would I just NOT connect the CT to anything (tape it off)? This is an Edcor xpwr178 that I'm looking at. I thought about getting a Hammond 276X, but I can't find anyone who has the new version(with 125V primary) in stock. I'm open to suggestions...

Yes you would tape off the unused CT of the 5V winding.
If you go with the Hammond, make sure to get the new version. The heater voltage is high with the new version, with the old 117V tap it will probably be around 7V or more with 123V input.
