You should be able to take out the vibrato and use the vibrato tube as a second gain stage right? Kind of like how Super uses one half of a preamp tube to have 3 triodes. Would the power supply and OT for a Vibro Champ like build be able to do this?

Well, it's powering the tube now, isn't it? So, yes, the power supply will be fine. One thing you need to consider is that the extra drive to the power tube grid will almost certainly drive the amp into cutoff and blocking distortion unless the input to the power tube is padded down a bit.

The power supply has no idea in the world what each tube is doing. The preamp tubes all pretty much use the same amount of power regardless of what they are up to, so if all you are doing is re-purposing one of the tubes, then the powr supply will never know the difference.
You can overdrive the signal all you want, but the power stage won;t put out any more power than it has to begin with. Distorting your signal won;t have any effect on the OT stress.Education is what you're left with after you have forgotten what you have learned.
