Hi have a tube pedal that could have some improvement in regards to 60hz hum. It uses the votage doubler circuit below. I was thinking of adding a diode across the "top" capacitor w/ the cathode on the + supply to reduce ripple. Would this work?

The extra diode won't really do anything except protect the top cap against reverse voltage. This circuit produces 120Hz ripple although there can be a 60Hz component if the caps are mis-matched.WARNING! Musical Instrument amplifiers contain lethal voltages and can retain them even when unplugged. Refer service to qualified personnel.

Even some hi fi gear uses a voltage doubler supply (The Fisher 500B & 500C come to mind). Perhaps additional filtering would help. Maybe follow the
rectifier with a Pi filter before tapping in.
That is, if it's actually 120hz you have. If it's actually 60hz, then what LT said.
