In fairness I would probably also expect the EL84 amp to be more hissy as they have more gian than 6V6's.

For interests sake, I built an amp that you could plug in 6v6 or EL84 and with the EL84 the hiss was much louder at the same volume control settings.
You just have to get your pre-amp as hiss free as you can.
