No question. 2x12, 4x12, no worries. Just make sure the cab is 4 Ohms presuming your Champ is stock, or otherwise matches the impedance of your amp.

      What would be the advantage in using 2 x 12" as opposed to 1 x 12" ?
(presuming they're to be in the same cabinet).

I'm curious as I'm in the parts-assembly stage of building an amp with
a Champ output stage. I'm planning on making it a head with separate
      1 x 12" cabinet.

I am very happy with the single 12" in my 5E3 but I have played my Champs many hours through both 2x12 and 4x12 cabs. They sound bigger, is all. I do not know the math to calculate how much air is being moved and have never used a SPL meter to check but the 2x12" sounds bigger than the single 12" to my ears. The 4x12" sounds much different but also has very different speakers (G12-65) than the 2x12 (G12M Greenback and G12 Vintage 30) so it is not a fair comparison. I do not think the 4x12 is really much louder if at all in this case anyway. YMMV.
