The goal is to have el84 overdrive without attenuator or beeing deaf...
The preamp would be a trainwreck style or plexi.

Certainly plausible, but unclear if the values are optimal (I would simulate it) or if it will achieve your OD tone goals.
OD with spkr/OT is different than OD with R load. There are some prior threads that discuss spkr simulators for purposes like this.
You might want to look at those. In the end, no matter what you read or draw, you won't really know how it sounds without trying it.

Very similar to what is done a fair bit in HiFi - with triode strapped EL84 as the phase splitter and a centre tapped inductor load.

If you've got a centre-tapped inductor, you don't need a phase splitter.

True with the Garnet circuit. The CT inductor is actually an autotransformer wired to provide phase inverted outputs.

But the 8585 circuit is different. Here the EL84s are wired as LTPI and the inductor is used to increase output swing at reduced losses.
