What kind of glue is used to glue the neck to the body?

I do want to add you can use Polyurethane to add disimilar materials to the guitar like a metal top. As long as it is not structural Gorilla glue is fine

I do have a question though, what is PVA?

Titebond original,II and II are all PVA as is elmers and many other brands of glue. White glue is also a PVA.
