Replacing pickups on epiphone les paul classic 2021 model

How hard its to swap dimarzio paf pickups on a epiphone les paul classic? I noticed epiphone stock pickups come with a plastic connector. Cant i just hand wire the dimarzio pickups?

Sure, you can hand wire it. Guitars have been built that way for decades.

So how do you approach that? I would like to use the same push pull pots to have the split and reverse phase options

We need more specifically what model pickups you have, how EXACTLY you want it wired (both pickups split, one only, how many push pull pots, what kind of switches, etc., etc.). It's impossible to give advice with such little info. Sans that, there are guitar wiring diagrams all over the web. You should be able to find what you need with a simple Google search or two.
