Does anyone have a recommendation for a vacuum pot? I've looked for one and can't find what I'm looking for. I guess I could make one but would rather buy something. Thanks!

having worked in the packaging industry I suggest you look into a cheap vacuum chamber packer. I would recommend one with a stainless lower chamber and smallish pump. these can easily be fitted with a small wattage heating element and thermostat.
you don't need anything fancy or expensive as you don't need to evacuate to .01% oxygen as they do in the food industry
you should be able find a good one used ... I see them all the time at second hand food equipment dealers here in australia

I've done a Rube Goldberg vacuum mod to my pot, which is a small slow cooker. Just cut a thick (1/2" or better) phenolic cover using the original glass one as a template, drill and tap a hole for vacuum generator fitting Shop the Stick Fast V812 - Vacuum Generator at Grizzly.com. Apply a good silicone seal to the inner edge of the pot and a handle to the phenolic lid and you're ready to go. Oh - you need a decent compressor capable of 90 PSI and about 6 CFM.

I have since reinforced the lid. I'd use 1/2" lexan next time.
