I am about to rewind a coil from an ibanez V8 HB. After I wound it, do I assemble the HB then pot the whole thing or do I pot just the rewound coil?

Since you are new at this thing, potting will be nessesary. I would pot the coils "bare" with the leads hooked up. Take it out and assemble it,tape it. After assembly, put it back in the wax for just enough time for the wax to saturate the inner components. Pull it out and wipe immediately.
NOTE: Waxing takes the "breath of life" out of the pickup. If your winding tightly, waxing really isn't nessesary. What dcr are you winding too?

I will have to recheck the dcr of the good coil. It is a high out HB and if I remember right, the DCR of the good coil was something like 7+ or 8+. This is another of my worry. I will be using #42 single poly magnet wire. Will I be able to fit enough turns to rpoduce the desired DCR? Approximately, how many turns would be needed to reach say, 8+? I read from someone who posted here that he gets about .8K per 1000 turns of #42 wire.

With the Ibanez bobbins, you may get 8k with 42. Standard size, and vintage bobbins are much smaller. 8k with 42,,,,thats highly unlikely. Read the post again, he was talking about 43 at 1000 turns per1.0k. You need 43.
