Pickup covers

Hello,
I have a Epiphone Les Paul Special II. The pickups are 700T, and 650R. I have a set of chrome covers removed from another set of import humbuckers. Is it logical to think by putting the covers on the Epiphone humbuckers it would tone them down a bit and remove some of the brittleness from the sound ?

That may work out ok.
What you need to watch is pole spacing.
Most import pickups and covers are 50mm spaced.
Most Gibson american pickups are 49.2 mm spaced.
The covers do not readily fit each other.
So first I would take some measurements, and see if you still want to swap them.
If they fit on there ok, give it a try.
Don't get too carried away on your soldering, and you will be able to take them back off if need be.

Assuming the cover will fit, you might notice a little less high end, but more than likely I'd consider changing the magnet type and strength before I added a cover.
