what does mud sound like

It sounds like this "woooof, wooooof." :-) One man's mud is another man's "creamy" tone. Jump blues guys love turning their tone pots all the way back for muddy distorted rhythmn chops, in rock the rock police would shoot you for that. Its all relative .....

What Dave said. All depends on what you want. If you want bright, and dont have any top end, you have mud. But if you want warmth, and have too much brightness, that doesn't do the trick either.

I like having the highs so I can remove them if I want, but sometimes mud is its own tone, like with a Gibson EB-0.

mud is usually a problem in the neck pickup of any kind of pickup. If the bass strings mush the tone out, thats mud, to me. Hard to have a muddy bridge pickup because of where its sitting.

I agree. I like my neck pickups on the brighter side. Some overwound bridge pickups sound muddy if you are trying to get a clean sound of them. Or maybe dull is a good term. But they sound good with a ton of distortion.
